It is found around the Indian Ocean and adjoining seas. It is a popular game fish, growing up to 45 kg, and is a strong fighter that has on occasion been seen to leap out of the water when hooked. Kingfish Steaks With Lemon Garlic Butter Recipe

Ingredients for Kingfish Steaks with Lemon-Garlic Butter


2 steaks of kingfish, preferably 1 inch thick

a half-cup of soy sauce

3 tbsp. lemon juice

a couple of teaspoons of water

a quarter teaspoon of garlic powder

1/4 teaspoon black pepper, freshly ground

1/4 teaspoon salt (Pink Himalayan salt is preferred)

1/2 teaspoon sugar (brown)

split 1/2 cup unsalted butter

2 tbsp. extra virgin olive oil, divided

1 garlic head, minced

1 tablespoon lemon juice


How to Make Lemon Garlic Butter for Kingfish Steaks


Prepare the fish by thoroughly rinsing it and draining the excess water. Prepare the marinade while draining the fish. Soy sauce, lemon juice, water, garlic powder, black pepper, salt, and brown sugar should all be combined in a container. Before adding the fish steak, make sure all of the ingredients have dissolved completely. To uniformly spread the marinade, flip it once. Refrigerate it for at least 2 hours before cooking it.


TIP: Make the marinade in an airtight container so you can just add the fish and shut it for the fridge. It's more sanitary, and there's less mess!


2 tablespoons butter and 1 tablespoon olive oil, melted in a nonstick grill pan Cook for 3 to 4 minutes on each side over medium heat. Spread 2 tablespoons of butter on top of the kingfish after 3 to 4 minutes, then flip it to cook the other side. Place the fish on a serving dish and remove it from the heat.


TIP: You may cook in any nonstick pan, but the grill marks make the dish seem more appealing and Instagram-worthy!


Melt the remaining 14 cups of unsalted butter in the same nonstick grill pan. Once the butter has melted, add the remaining olive oil and the minced garlic, stirring constantly until aromatic. 1 tablespoon lemon juice and the rest of the marinade Simmer for 3 to 4 minutes at a minimum.

Pour the sauce over the kingfish steaks on a serving dish. As desired, garnish with lemon slices, garlic pieces, and parsley.

Drying process of kingfish at home


· Catch a fish. Put it on ice immediately. Clean it while it is FRESH!

· Slice the fish into boneless chunks, no thicker than 1/2 an inch. Skin optional. Mine was skinless.

· Make a brine of 1 tbs of non-iodized salt per cup of water

· Soak the fish slices in the brine for 2 – 4 hours.

· Place in the dehydrator on "High" for 6-8 hours.

· Start to test consistency after 5 hours, and when it is dry with little flexibility left, you are done. If you like a little more snap to it, let it dry another few hours
